200 g ricotta cheese
40 g pecorino cheese
50 g pine nuts
red radicchio
rocket
EVO oil
a few walnuts, shelled

Method:

Cut the rolls in half, spread the bottom half with ricotta, add a few flakes of pecorino cheese, some freshly ground pepper and a drizzle of oil.

On the side, coarsely chop the walnuts and transfer them to a small bowl with the pine nuts, the red radicchio and the rocket, which you have washed, dried and coarsely torn. Season to taste with salt, oil and balsamic vinegar, then fill the sandwiches.

Add a few drops of honey and cover the top halves of the rolls.
