Ingredients [ Per 2 persone ]

2 Bruschelle Morato Pane
2 tomatoes (meriva or ribbed)
10 yellow cherry tomatoes
10 datterini tomatoes
1 mozzarella fior di latte
4 garlic cloves
q.s. E.V.O. oil
q.s. origan
basil to taste
a pinch of salt and pepper
Bruschetta with three tomatoes, mozzarella and garlic oil

Method:

    In a small saucepan, warm the extra virgin olive oil, then dip the garlic cloves on which you have made incisions and leave them in the oil for a few hours.

    Wash the tomatoes and dry them. Cut the ribs or meriva into slices, divide the yellow ones in half or quarters. Also cut the datterini tomatoes in half.

    With frayed hands the mozzarella that you have kept at room temperature.

    Cut the Bruschelle in two and toast them on a non-stick pan.
  • 5
    Brush the Bruschelle with garlic oil, arrange the tomato slices, chopped cherry tomatoes and mozzarella on top. Season with more oil, oregano, salt, pepper and garnish with basil leaves to taste. Serve immediately.
