Cut the pumpkin into small pieces, place it in a non-stick pan with a drizzle of oil and two cloves of garlic. Salt it lightly, add freshly ground pepper and cook it, covered, over medium heat until it is soft (add a little water if necessary).
Remove the garlic and place the pumpkin in a mixer, blend it to a smooth, thick consistency with a little EVO oil and water.
In the same pan, sauté a few slices of red onion for 30 seconds.
Cook the meat on both sides. Brown the bacon without oil in a non-stick pan until crisp and golden.
Heat the bread and compose your hamburger: spread the pumpkin cream and add the meat, some sliced onion, the bacon and some rocket. Close the hamburger and serve immediately.
