Ingredients [ For 4 people ]

8 slices Texas Toast
300g turkey breast
50g basil
half a glass EVO oil
6 tablespoons grated Parmesan cheese
1 tablespoon pine nuts
(optional) garlic cloves
q.s. salt
(optional) lemon juice

Method:

    The traditional and ideal way to prepare pesto is with a mortar and pestle, but you may use a mixer or blender. Put the basil, pine nuts, chopped garlic and Parmesan cheese in the blender or mixer and blend, adding the oil slowly, until a smooth cream forms.
  • 2
    griddle the turkey breasts on a very hot griddle. Once they are cooked, season with salt, ground pepper and lemon juice.
  • 3
    griddle the slices of Texas Toast, spread 4 slices with the prepared pesto, then place the turkey breast cut into small pieces and close with the remaining slices.
