Chickpea Burgers with robiola cheese and Baby Spinach

4 Morato American Burger rolls
200 g chick peas, already boiled
80 g robiola cheese
1 potato
1 egg
1/4 onion
parsley
coriander
breadcrumbs
baby spinach
extra virgin olive oil

Method:

Put the potato in cold salted water and cook it for approx. 40 minutes, until it is soft. Drain and allow to cool. Finely chop the onion, parsley and coriander.

Add the chickpeas, potato and chopped herbs in a small bowl. Mash well with a fork to mix all the ingredients. Add the egg, salt, a twist of pepper and the breadcrumbs and mix all together until a smooth mixture with a soft but compact texture is obtained.

With the aid of a ring mould, make vegetarian burgers to match the size of the roll. Cook both sides in a pan with a little oil at a low heat, or on a hot striped cast iron griddle.

Fill the rolls with the chickpea hamburgers, the robiola cheese whipped with a little oil and salt, and garnish with a few baby spinach leaves.
