Ingredients [ Per 4 persone ]

4 slices Morato wholewheat American Sandwich bread
150 g fennel
1 orange
20 g pine nuts
150 g fresh spreading cheese
2 tbsp extra virgin olive oil
1 tbsp lemon juice
mint
salt
Canapés with fresh Cheese, orange and fennel

Method:

    Prepare a citronette by dissolving a pinch of salt in the lemon juice. Add the oil and mix well with a fork. Put aside. Wash and clean the fennel, removing the green parts with the leaves, and cut into fairly thin slices.

    Peel, supreme and segment the orange. Toast the pine nuts gently in a small non-stick pan. Place the sliced fennel, the orange segments and toasted pine nuts in a bowl. Dress with the citronette, mix and allow to sit for at least 15 minutes to enhance the flavour.

    Spread the slices of bread with fresh cheese, covering the whole surface. Place some fennel and orange salad on each slice and garnish with a few mint leaves. Cut into triangles and serve.
