Wash the tomatoes, slice and toast them on both sides in a hot pan with olive oil. Peel them and set them aside warm.

Beat the eggs with a pinch of salt, the basil and the leeks. Heat a tablespoon of oil in a pan and cook the omelette on both sides. Keep it warm. Toast the bread and slice the mozzarella.

Make 4 sandwiches, using 3 slices of bread each and layering all the ingredients. Cut the sandwiches diagonally to form 4 triangles. Then insert a skewer into each of the triangles.
